Job Details


  • Supervise food production and distribution to meet or exceed Sunrise hospitality and service standards.
  • Update use records, productions charts and all other necessary records on a regular basis.
  • Assist Director, F&B with menu planning using Sunrise hospitality and service guidelines to meet the needs and desires of the community’s resident population.
  • Maintain program of menu research to develop new ideas.
  • Ensure correct portioning and plate presentation of all items.
  • Control over production and utilize leftovers.
  • Ensure all functions are served according to the requirements on the banquet event order.
  • Assist in the taste panel prior to lunch and dinner meals.
  • Practice all safety and loss prevention procedures and encourage others to do so; adhere to universal precautions and all infection control guidelines.
  • Participate in and promote the community‘s energy conservation program..
  • Ensure all special dietary needs are met as they pertain to the healthcare center.
  • Maintain a program of inspection to ensure all food production areas meet or exceed Sunrise’s sanitation and facilities management standards.

Managing Costs

  • Assist Director, F&B in the development of department’s operating budget working within Division, community, and F&B guidelines.
  • Manage food costs and purchases within community and department guidelines.
  • Responsible to track and record food production costs; monitor weekly food production costs utilizing the Division’s F&B reporting system.
  • Manage food and supplies purchasing program as directed by Director, F&B.
  • Maintain labor distribution summary data for each period.
  • Ensure all foods purchased are properly received, dated and rotated.
  • Supervise the Food Inventory on a weekly basis.

Managing Human Resources

  • Supervise, set work schedules, and assign duties for food production and utility personnel.
  • Participate in the hiring, orientation, training, performance evaluation .and termination of all food production personnel.
  • Ensure that all food production employees meet or exceed Sunrise’s standards of appearance; monitor sanitation of department, hygiene and health standards of personnel.
  • Maintain positive employees relations programs and practices; implement Sunrise’s Guarantee of Fair Treatment Policy.
  • Manage an ongoing on-the-job training program to ensure that all employees are properly trained and perform their duties according to Sunrise hospitality and service standards.
  • Create a motivating environment which encourages employee involvement, creativity, and problem-solving.
  • Attend in-services as required.
  • Maintain and product the confidentiality and resident information at all times.


  • Five to ten years of successful cooking and kitchen management experience.
  • Ability to provide food service to the elderly which meet, or exceed Sunrise hospitality and service standards.
  • Ability to effectively supervise a diverse employee work group.
  • Desire to work with the elderly.
  • Ability to effectively communicate with supervisor, employees and residents.
  • Knowledgeable of principles of sanitation and safety in food and equipment handling.
